Babo degree / Babo scale
The Babo degree (Brix grade of grapes) is the unit of measurement indicating the sugar concentration contained in the must before fermentation. It is generally measured on the grapes before mashing to determine the ideal harvest time. Measurements in the field are made using a refractometer, which bases its principle on the refraction of light in relation to the density of the samples examined.
